Each strand of saffron consists of two parts, which is very important in distinguishing different types of saffron; The first part is the stigma (the red part of saffron) and the second part is the cream (the white part of saffron). In the following, we introduce the types of saffron flowers in Iran and their differences:
Pushal saffron is one of the types of saffron models. At the time of harvesting saffron, the stigmas are separated from the lower red part called the cream. Stigmas have 1 to 3 mm of pistil in a branch; At the end of the three-branched stigmas of saffron, there is some yellow or white, which is called Pushal saffron.
This saffron is called Sargol because the cream part is separated from the stigma. To get this saffron, you only need the upper part of the saffron string, which is the red part of the saffron string, the stigma. One of the most basic features of Sargol saffron is the same color and one hand of its strings. This type of saffron has the highest amount of coloring and the highest quality.
Negin saffron is one of the most demanded and high quality types of saffron. It has many customers in the markets of the region and Iran. This saffron has a wonderful coloring and appearance and is very fragrant. In this saffron, three strands of stigma are connected and smooth and without breaks; In the case of Sargol saffron, the stigmas are broken. For this reason, this type of saffron has a higher price and a better appearance than Sargol saffron.
Negin saffron is divided into three parts: pseudo-negin, super-negin, and negin-persi. The saffron whose length is more than 2.5 cm is called Super-Negin saffron. If the end of saffron is yellow, it is called Shebhe-negin. The diameter of super-negin and Shebhe-negin saffron is equal. In Nagin persi saffron, if we dry it in an iron state, the saffron pen is uniform and smooth and does not break.
